Owned by Eric Tavrow Sinclaire & Martin Burge formerly of Gotham Bar & Grill fame, Fresh became a Tribeca institution & a NY talking point for playfully exotic high-low seafood.
Fresh, an airy seafood restaurant opened it’s doors in 2002. Co-owners Martin Burge (formerly of Gotham Bar & Grill fame) and Eric Tevrow Sinclaire, whose company Early Morning Seafood purveys seafood to upscale Manhattan chefs like Alain Ducasse opened this elegant seafood restaurant, knowing that he had more than just prime TriBeCa real estate—he also had first dibs on the daily Eastern-seaboard catch, courtesy of Early Morning Seafood, Tevrow’s wholesale purveyor to star chefs
like Alain Ducasse and Gray Kunz. The chef prepared an array of whimsically named “prime cuts,” like a “pot roast” of majestic salmon with snow crab, or prime rib of swordfish. The elaborate food is served in a space that looks almost nondescript by New York standards. The walls are partially curved to resemble the hull of a ship, but they’re painted in pallid aquarium colors. Cenk Fikri Inc supplied complete back of house operations for this soothing cavernous Tribeca institution.
